Winemaking
After harvesting, the grapes are transported to our cellar by means of refrigerated trucks. The wine is vinified in a reductive manner to exclude oxygen and ensure concentrated flavours. The wine goes through a cool fermentation process with an Austrian yeast, which is inactivated by cooling when the residual sugar reaches 6g/L. It is then matured on its lees (sur lie) for 6 months prior to bottling.
