Grapes are sorted manually and destemmed, skin contact lasts for 4-8 hours and pressing is by pnuematic press. Each vineyards pickings are fermented separately and blended before bottling. Fermentation commences using wild and cultured yeasts in stainless steel tanks and lasts for 40 days at 12-15°C. The wine is matured on its lees for 6-12 weeks in the tanks with malolactic fermentation prevented, no oak contact ensures the wine retain its varietal character and clearly expresses the local terroir. The wine is filtered and bottled.
