The blend of Viura (50%), Malvasia (30%) and Garnacha Blanca (20%) undergoes a cold soak maceration for 14 hours. Fermented in new French oak barrels (Vosgues area) with a Burgundy Medium-High toasting. The wine is fermented with indiginous yeast selected from their own vineyards. The wine then ages for 11 months in new French Oak Barrels on its own lees, with batonnage twice per week during the first six months. The name Organza comes from a particularly fine silk that is used in creating wedding dresses, it is the super fine structure and elegance that this wine posesses that earnt it its name.
