Masses of black fruit on the nose, slightly resinous wild blackberry, star anise, menthol, concentrated beef stock and clove. With a caressing, rounded texture, it is deep, rich, succulent and velvety. Clearly made from beautifully ripe fruit, it has lovely freshness and balance. Really, really delicious. It could be cellared, but it's so irresistible, why wait?

Winemaking
Both parcels are fermented separately in open fermenters, where the presence of whole berries is encouraged. Pumped over twice daily, flavours colours and tannins are gently extracted from the grapes until pressing off skins after 7 days. Both parcels are retained separately and matured in a blend of 40% new French Oak hogsheads for 18 months prior to careful blending and bottling.
