Winemaking
Attention to detail is the hallmark of the winemaking. The grapes were hand picked and gentle destemmed to ensure the maximum uncrushed berries in the fermenting vat. Fermentation was carried out in small open topped vats. After extensive post ferment maceration, to acheive balanced structure, the wine was basket pressed before going to French oak barrels, 50% new. SQM Cabernets Merlot spent 19 months in barrels before a light, fresh egg white fining prior to bottling.
