The harvest occurs at night the cold is a key factor in ensuring that the grapes are picked at a low temperature to avoid oxidations. Wine ferments in three different materials: stainless steel, concrete and wooden vats to obtain more complex aromas, a wine rich in nuances. Fermentation begins at temperatures of 16ºC and is then brought down to 14ºC for herbal and thiol aromas to develop. During fermentation a micro-oxygenation of the wine is done to avoid the tendency of this variety to undergo reduction. The wine is kept in contact with the lees until the time for bottling to get a creamy mouth feel. 33% of the grapes fermented and were stored in the wood until bottling helping the capacity to age of this wine.
