A subtle Chenin Blanc from two mature vineyard sites that is fermented inside a concrete egg. The nose shows promise, with suggestions of quince, pear and butterscotch; opening up to display a rich, toasty, mushroomy character. Rich and weighty, it is leavened and knit-together with bright acidity. Excellent persistence of flavour on the long finish. Everything seems to imply that this will reward keeping a few years to enjoy all it has to offer.

Hand-harvested, cooled to 5°C, whole bunch pressing, oxidative style for vineyard nuances. Natural fermentation in concrete 'egg' tanks and oak barrels. Lees contact for six months adds midpalate texture and richness. Complex, minerally wine.
