The Pinot Noir and Pinot Meunier grapes were hand picked and gently whole-bunch pressed. Approximately 10% of the blend was fermented in 4-5 year old Burgundy barrels, adding a lovely texture and richness to the wine, and partial malolactic fermentation took place in order to soften the wine’s natural acidity. The wine spent 7 months in tank and barrel (2 years on lees in bottle) before tirage where 3% of Pinot Précoce (having been vinified as a still red) was added to enhance colour, body and flavour. The wine undergoes second fermentation in bottle and ageing on its lees for 24 months before disgorging.
