Serve
The Classic Reserve is pale gold in colour with delicate and fine long-lasting bubbles. Expect a complex bouquet of green apples and freshly baked brioche. To taste there's notes of soft lemon sherbet, biscuit and a subtle oak character.
Process
Whole bunch pressed grape juice is barrel fermented in old white Burgundy barrels. Reserve wines are added to the blend before secondary fermentation. After 3 years ageing on lees in a bottle, the wine is disgorged with a light dosage of 7 g/L.
People
Simon Robinson is the Founder and Owner of Hattingley Valley Wines (and also the Chairman of WineGB, a leading trade association for grape-growers and winemakers in the UK). Production is lead by talented head Winemaker Emma Rice.

Hattingley has always sourced fruit from a wide range of England’s regions rather than just relying on their own vineyards in Hampshire.
Winemaking
25% barrel fermented in old white Burgundy barrels, 8 months on lees in tank & barrel, no stirring/sulphur dioxide, tirage July 2011, 21 months on lees, 4 months post disgorging. Signature style with texture & richness.
