Biodynamics is a form of organic farming that emphasises the interrelationship of soil fertility and plant growth, drawing on Rudolf Steiner's theories that incorporates an astrological sowing and planting calendar.
Winemaking
The bottles were aged on their lees “sur lattes” for 52 months. Composed of Xarel∙lo, Macabeo, Chardonnay and Parellada, each variety is vinified separately before final assemblage. Gramona is involved in each and every step in the winemaking process, from vine to bottle. Demeter-certified* organic fruit comes from 13 plots within the association Aliances per la Terra. Grapes are picked by hand into 25kg boxes, before being hand-sorted at the winery, transferred by gravity, and pressed in whole bunches. Only the heads and hearts (52.5%) of the must fraction from the press are used. The touch of ‘expedition liqueur’ from Gramona's solera, which is well over a century old, gives this sparkling wine an unmistakable signature and elegance, that has made this sparkling wine a classic for generations of loyal drinkers. * Demeter is the most stringent organic certification standard.
