The grapes are picked by hand, go onto a sorting belt, are transferred by gravity, and pressed whole bunch. This sparkling wine is aged for 160 months in 100% artisanal process. The bottles are sealed with a natural cork stopper throughout the time they spend resting in the cellars. All wines are hand-riddled.

96/100 - They didn't produce Enoteca in 2010 because they didn't like the vintage that much. So, from the 2009 I tasted last time, we jumped to the 2011 Enoteca Brut Nature, from a year that was pretty similar to 2012, which I also tasted next to it. The wine feels quite austere and a little closed but balanced and harmonious with a faint bitter twist in the chalky, austere finish. Both vintages have a lot of finesse, but today, I have a preference for the 2012. There were 1,800 bottles, which were sold out pretty quickly. This matured in bottle with lees for 136 months.
