Aged on its lees “sur lattes” for a whopping 108 months in the deep silence of the Gramona cellars, traditionally sealed with cork stoppers. 'Pupitre' racks and hand-riddling are employed to clarify the final wine. A moderate dosage is added (5.5 g/l, and the 'expedition liqueur' is an aged wine from a century-old family solera. The entire production process, from vine to bottle, is controlled by the Gramona family. Grapes are picked and sorted by hand, before descending by gravity to be whole-bunch pressed. Made from 65% Xarel.lo and 35% Macabeu grapes. Total production is just 4,800 bottles. A Corpinnat Gran Reserva, made 100% by artisanal processes, which have been handed down from generation to generation.

The Gramona family have worked so hard and waited to long to build layers of complexity, that it would be a shame to muddle these with complicated food preparations. However, its richness does allow it to stand up to dishes with creamy sauces, whethe r they be seafood, white meat or mushroom dishes.
