Biodynamics is a form of organic farming that emphasises the interrelationship of soil fertility and plant growth, drawing on Rudolf Steiner's theories that incorporates an astrological sowing and planting calendar.
Winemaking
100% biodynamic Pinot Noir. After painstaking vineyard work to achieve optimal ripeness, the grapes were hand-picked and placed carefully in 20kg boxes. Bunches were selected on the sorting table, transferred by gravity and pressed whole to extract just 50% of the juice; carefully separating the different parts of the pressing. The wine was fermented at 14°C in 600 and 300 litre old French oak barrels in a temperature-controlled room. This results in a fresh, elegant base wine with fine balance and structure. One of the rules from the outset has been to achieve harmony between the aromatic expression of the grape variety: preserving its characteristic pale hue and avoiding the extraction of too much tannin. Cellar-aged on the lees in bottles on their sides (“sur lattes”) sealed with cork stoppers for over 36 months. Riddled in traditional 'pupitre' racks, disgorged by hand and finished with zero dosage (Brut Nature). The process is 100% artisanal.
