Deep, saturated purple in colour, this has an exceptionally concentrated aroma of super-ripe black cherries, cream and peppery spice. It tastes the way it smells - concentrated but so fresh and juicy, with the beginnings of complexity: freesia, clove, star anise and white chocolate. The tannins are present yet supple, and the overall texture is succulent and delicious. This could age for a decade or so, but it's gorgeous already. The wine comes from vineyard terraces high up on the Dentelles de Montmirail mountains, just below the vines used for 'Les Secrets.'

Winemaking
The grapes are crushed and destalked with no yeast added (the fermentation relies entirely on wild yeasts). The fermentations lasts for 15 days and the cap is punched down twice daily to aid the extraction of colour and tannin. The wine is then aged 60% in vats and 40% in 2 - 4 year old demi muids.
