Winemaking
September marks the start of harvest with ripe grapes limited to 50 hl/ha. Crushed and soaked, the juice naturally decants. Half ferments in stainless steel tanks, the rest in oak casks with malolactic fermentation. After eight months on fine lees, the final blend is crafted, lightly filtered, and bottled, capturing the essence of meticulous winemaking.
