From the famous Pinot Noir region of Central Otago, and made with exclusively organic fruit, this has aromas of luscious red cherries and red-fleshed plums, with hints of clove and allspice. Soft, ripe tannins provide good structure, which underpins a lovely fruit-forward style of Pinot. Fruit is hand-picked, and fermented using wild yeasts from the vineyard and winery. The wine is aged in barrels, of which only a limited percentage are new, to ensure preservation of the original fruit and vineyard characteristics.

Winemaking
The juice is cold soaked pre ferment for 5 days, then extended soaking after fermentation for up to 7 days. All the juice relies on indigenous, wild yeasts to complete fermentation. All of the wine then goes through malolactic fermentation in French oak barrels (20% new).
