Winemaking
The grapes are harvested in the cool of the morning and gently pressed to preserve their delicate aromatics. Fermentation takes place in temperature-controlled stainless steel tanks, followed by a short period on the fine lees to enhance texture and complexity while maintaining the freshness, purity and expressive character of Zibibbo.
