Winemaking
After harvest, grapes are kept at low temperature (<15°C) to keep the fruits in optimal conditions. Fermentation occurs adding selected yeast at controlled temperatures (<28°C) with soft pump overs (2-3 times). After fermenting, wine has wood contact for 3 months.
