Winemaking
The grapes were hand harvested during the mornings of the second and third week of March, in different picking times at 22 to 23,5 º brix. They were carefully transported to the winery. A percentage of the harvest was cold macerated in the pneumatic press for 12 hours in order to enhance aromas and flavours. After pressing, the juice was chilled down to 8 º C and then gravity clarified. The must was fermented 100% in stainless steel tanks at low temperatures (12-13°C, finishing at 16°C) for 20-22 days until dryness. The wine was left on its lees for 5 months to get roundness and improve the texture in the palate. The final blend is 65 % Clon Davis 1, 20% Clon 242 and 15% Clon 107.
