Winemaking
The grapes were hand harvested in 2 different picking moments, on April 10th and 15th at 23-24°brix. The picking was divided in different days in order to have different components and flavours for the final blend. The grapes were pressed as whole clusters at low bars and the juice was chilled down to 8 º C and clarified to 130 NTU. The fermentation was made 100% in stainless steel tank with the purpose of obtaining a fresh wine. Neutral yeasts were used helping to show the pureness of this grape variety. The fermentation was done at low temperatures (13,5-16°C) for 20 days. The wine was left on its lees for 6 months with a batonnage regime in order to get roundness and volume in the palate.
