Winemaking
Riesling was harvested by hand in small bins of 15 Kg; gently crushed and then cold macerated into the pneumatic press for a few hours; then softly pressed; the juice was naturally clarified and then inoculated with selected yeast; fermentation took place in stainless steel tanks for about 20 days at 15°C temperature. After the first racking, it is stored on the fine lees for 5 months before finishing (including protein and tartaric stabilisation) and bottling.
