Winemaking
Grapes were manually harvested, gently crushed and cold macerated into stainless steel tanks for 3 days with enzymes. After that it was inoculated with selected yeast (Alg 804) and fermented at controlled temperature, immersing the cap twice a day into the juice to have much better and softer tannins and color extraction. After the malolactic fermentation, a part of the wine was barrel-aged for 10/11 months in French oak old barrels (3rd use) and the balance in staineless steel.
