Winemaking
The fruit was gently whole-bunch pressed, collecting only free-run juice. Fermentation occurred in stainless steel and barrels at 14°C, starting with wild yeast before adding two strains for complexity. The wine aged six months on lees, with 50% in old French oak undergoing partial malolactic ferment for subtle toasty, nutty texture.
