Winemaking
The grapes are whole bunch hand harvested to ensure the best fruit is selected. All the fruit is destemmed followed by fermentation and maceration in small concrete tanks for 25 days at around 23-25ºC. Fermentation is followed by a gentle pneumatic pressing and a natural malolactic fermentation. The wine is aged for 15 months in a mix of French and American oak barrels before being filtered and bottled.
