Winemaking
Fermentation occurs at a controlled temperature, between 24º and 26º C and is characterised by frequent pumping-over and racking. Once maceration is complete, the wine is placed in oak barrels where it undergoes malolactic fermentation, and matures for about 12 to 14 months. Aging is completed with the bottle lying on its side, for about 10 to 12 months.
