Winemaking
The grapes were harvested between the second and fourth weeks of April. When the grapes arrived at the winery, a 3-4-day pre-ferment maceration took place at 12ºC to extract concentrated aromas and flavours. The alcoholic fermentation took place at a temperature of between 26ºC and 28ºC. This was followed by a post-fermentative maceration for 10 days to extract the maximum colour and tannins. Finally 80% of the wine was racked to French and American oak barrels (15% new and 85% used) to undergo the malolactic fermentation and subsequent ageing for 12 months. The remaining 20% of the wine was kept in stainless steel tanks to retain the primary fruit component in the final blend of the wine.
