Even at a young age, the Cask 23 shows clearly what it is: a blend of the choicest portions of the Fay and SLV vineyards. It displays Fay's wonderfully vibrant and honest morello cherry aroma, along with toasted spices, a waft of woodsmoke and pencil lead. It has the immediate succulence and completeness of SLV, harnessed to Fay's restraint and elegance. It is indeed the perfect combination of the two - bravo! With fabulously refined texture, it is graceful, fine and pure, with such persistence of flavour that one sip can last for a minute or more. Even though this has an exceptionally long life of 3-4 decades ahead of it, it is easy to appreciate at this early stage.

" Like the 2020, the terrific 2018 Cask 23 Cabernet Sauvignon leans a bit more heavily on the Fay Vineyard (the 2019 includes a bit more S.L.V.). It's medium to full-bodied, supple, silky and elegant yet still possesses enough richness to evolve for the next two decades. From the stunning, slightly lifted aromas of violets, cherries and cassis, to the long, dusty finish, this exudes class all the way. Drink 2024-2045. "
Winemaking
Fermentation occurs in 100% stainless steel tanks. Each parcel of grapes was vinified and aged separately in small French oak barrels for a period of 21 months. This allowed the characteristics of each block to develop and to take on notes of subtle spice. Blending occurred at the later stages of ageing, with the final blend comprising 56.8% ‘Fay’ fruit and 43.2% S.L.V.
