Cask 23 Cabernet Sauvignon is the sublime meeting of the absolute best lots from the Stag's Leap Vineyard and the Fay Vineyard. The soaring, jubilant fruit character of Fay greets the nose, and is also evident in the mouth: providing succulence and opulence of texture. S.L.V.'s contribution is evident in the deep, dark, concentrated fruit and savoury notes in the background, as well as the tightly-wound, concentrated structure. Even more than the two single-vineyard wines, this is a wine that demands cellaring. With age, it is simply awesome: the 2012 vintage is drinking beautifully now, and will continue to do so over the next decade or longer.

" The 2012 Cabernet Sauvignon Cask 23 reveals more oak on the nose, but is a much deeper, richer, fuller wine than the S.L.V. Dense ruby/purple to the rim, beautiful blackberry and cassis fruit, cedar wood, toast and earth jump from the glass. Full-bodied and layered, but with nothing out of balance, this is probably the strongest Cask 23 since the glory years of the mid-80s. Look for this wine to drink well young, yet age effortlessly for 25 years. Drink 2015-2040. "
Winemaking
Fruit was handpicked in the early hours of the morning before undergoing fermentation in 100% stainless steel tanks. Each parcel of grapes was vinified and aged separately in small French oak barrels for a period of 21 months. This allowed the characteristics of each block to develop and to take on notes of subtle spice. Blending occurred at the later stages of ageing, with the final blend comprising 56.8% ‘Fay’ fruit and 43.2% S.L.V.
