Hand-harvested Nebbiolo (Chiavennasca) grapes are dried for several weeks to concentrate sugars, aromas and extract. After crushing, the grapes undergo fermentation with extended skin maceration, followed by malolactic fermentation. The wine is then matured in oak, developing depth, structure, spice and a polished, savoury character.
