Winemaking
To love olive oil one must learn to know it well for its exceptional qualities to be best appreciated. To talk about oil is an over-simplification; it is better to talk of oils, each one ideal for a particular dish or combination of flavours. The idea of producing single variety olives and de-stoning them arose from the same concept. Stoneless oil is obtained from olives with their stones purposely removed in an attempt to reach the pure taste of the fruit - the taste DNA of single varieties from their respective areas - while removing the effect of the oil contained within the stone. The oil thus obtained will be instrumental in creating a new language of oil in which every variety has its own taste, food matching and character. The extraction of this oil is more difficult from technical and practical points of view and results in a noticeably lower yield. Single variety olives are cultivated for the same purpose, that is, to emphasise the characteristics of single oils. These efforts will assist those who produce and those who use the oil to appreciate this extraordinary product by knowing and understanding it better. Variety: De-stoned.
