" Fresh, well-made and extremely dry natural wine with reined-in alcohol that ticks a lot of boxes and may have broad appeal with lovers of natural wine. A blend of biodynamic fruit – Pinot Gris and Riesling – fermented on skins in small clay amphorae for 24 days. Deep orangey gold, wonderful savoury aromas remind you of a Georgian qvevri wine – dried fruits and flowers, grilled nuts, saffron, terracotta. In the mouth the wine is fresh, finely textured, soft tannins, nice breadth of flavour; it’s as complex as you’d expect with orange notes predominating. Lovely long, dry river stone texture-finish with a pretty lift on the fruit on the tail, orange water perhaps. On the (technical) back label it’s called Amphora Natural White. Winemaking
Two parcels of Pinot Gris and one of Riesling were each harvested by hand, destemmed then fermented naturally and aged on skins in small clay amphorae and a small stainless tank. The parcels were gently hand plunged daily during fermentation and left on skins for a total of 24 days. After ferment, the first pick of Pinot Gris was basket pressed to neutral oak and the later pick of Pinot Gris was pressed with the Riesling to neutral oak. The wine remained in barrel on lees for five months undergoing malolactic fermentation naturally. The barrels were then racked gently into a small stainless steel vessel to clarify naturally for two weeks prior to bottling. It was bottled without any stabilisation, fining or filtration and with a minimal sulphur addition.

Complex and delicious
I thought this was fascinating at a tasting, but as a 'natural' wine, I wasn't sure how it would hold up after exposure to air, so I took the bottle home (with permission - I didn't nick it). It continued to drink well, and is full of amazing, complex nuances of fruit, flowers, herbs and tea. Since it was bottled unfined and unfiltered, it gets cloudier as you near the bottom of the bottle, and there are a few bits floating around. These are harmless, but you can strain the wine through muslin or a coffee filter if you prefer.
