Expect a lime-leaf and cardamom driven nose, with underlying orange peel. To taste, the juniper is dialled up, domineering the profile before black pepper, fennel and warming cassia finish the journey. Serve with an orange zest.
Process
Scilly Spirit carefully chose ethically sourced botanicals, which they steep in Neutral Spirit for 48 hours, before distilling in a stainless steal stills to a one shot London Dry Method. Each small batch is around 450 bottles.

The inspiration for Scilly Island Gin recipe refers back to 1665 when the survivors of a ship, wrecked around Bishop Rock, were rescued by bold crewmen in pilot gig boats from this island, St Mary’s.
