Serve with refined, light starters such as poached oysters and seared scallops, or with a main dish such as sole meunière. Also excellent with cheeses with a short ripening time, such as Chaource or creamy Langres.
Process
40% Chardonnay, 57% Pinot Noir and 3% Pinot Meunier; with reserve wine from the two previous vintages. Grapes are hand-picked, and fermentation takes place in temperature-regulated stainless steel cuves. Full malolactic with a final dosage is 9 g/l.
People
The longest-established champagne house, Ruinart was founded in Rheims in 1729, and has a rich and complex history.
Place
Harvested primarily from the terroirs of the Cote des Blancs and the Montagne de Rheims, whose soils contain a high chalk content.
Winemaking
The blend is made up of 40% Chardonnay, 57% Pinot Noir and 3% Pinot Meunier, 20 to 25% of which are wines reserved from the 2 previous years. The grapes are obviously hand picked and the fermentation takes place in temperature-regulated stainless steel fermenters. The wine goes through full malolactic conversion and the final dosage is 9 g/l.
