Vinification takes place at Quinta do Crasto in the Cima Corgo. After a rigorous selection, grapes are destemmed and crushed and transferred into stainless steel vats. This is followed by a long maceration period using delestage. Also known as 'rack and return', this French technique means that the juice is drained from the fermenting vat leaving the cap behind. The fermenting juice is then pumped back over the cap, maximising the skin contact. The result is a concentrated, complex wine that is also elegant and stylish . Ageing is for 18 months in French oak barrels (approximately 70% new, 30% one year of use).
