Bunches are carefully destemmed, fermented at controlled temperatures, and macerated to extract deep color, aroma, and smooth tannins. Malo-lactic fermentation occurs in oak barrels and steel tanks, followed by 20 months in French oak barrels, with racking every 5 months and 2 years of aging before release.
