Winemaking
The grapes, coming from old vines, were taken to the winery in small crates to protect them from damage. Upon reception, they were rigorously inspected on a sorting table, slightly crushed and then transferred to a traditional stone tank ('lagar') where they were foot-trodden. Later, grape spirit was added to stop the fermentation and fortify the wine. Aged for two years in large Portuguese oak vats and bottled without fining or filtration - meaning that a sediment may form in the bottle over time.
