Winemaking
The Old Vines grapes undergo strict selection upon arrival in plastic boxes at the winery. After inspection on a sorting table, they're lightly crushed and placed in a traditional stone tank ("lagar") for foot treading. Grape spirit is then added to halt fermentation and fortify the wine.
