Key Flavours
Serve
The perfect addition to a summer spirtz, this Extra Dry Prosecco packs a lick of sweetness to lift bitter amaros alongside a slice of citrus.
Process
Grapes harvested near Venice are pressed and the clear juice fermented to make a still wine. Sugar is then added and a secondary fermenation takes place under pressure forcing CO2 into the wine and naturally carbonating it.
People
Drawing on traditions dating back almost a hundred years, Botter's winemaking has been refined by three generations for whom wine was a passion as well as a trade.
Place
Named for the village of Prosecco, in Trieste, Italy, and made from Glera, Prosecco vines benefit from the Northern Italian climate which imparts characteristic crispness to the wines.
Winemaking
Once pressed, must is stored in steel tanks for fermentation at 18 °C over the course of 8-10 days. After this, the juice is filtered and returned to steel tanks for the second fermentation, carried out using the Charmat method at a controlled temperature of 14-15 °C.
