Winemaking
To create this Pinot Noir amix of yeasts are used (native yeast, followed by cultured yeast) and 10% whole cluster added. 100% malo-lactic fermentation in barrel in a mix of 100% Burgundian French oak barrels (65% new; 35% 1-2-year old) . Bottled without filtration to preserve the wine’s aromas and flavours and enhance aging potential.
