Single-vineyard Tempranillo, lustrous with black fruit, leather, roasted coffee and seductively scented with spice, sandalwood, cacao and a lick of liquorice.
Winemaking
Prior to alcoholic fermentation the tanks are kept below 14 ºC for a period of 6 days, allowing aromas and colour to be extracted from the skin. The alcoholic fermentation, which lasts 30 days is closely controlled regarding temperature and yeast. The malolactic fermentation is triggered naturally without the addition of yeasts, lasting 20 days at 21ºC. The wine is aged for 22 months in new French Oak barrels. There is no filtering or fining. Decant before serving.
