This wine is treated exactly the same way as the top wines of the estate, with manual harvesting, parcel by parcel into small 14 Kg crates, they arrive to the winery within minutes where they are cooled over 24 hours in a cold room. Following two sorting tables and then a cutting edge optical eye grape sorter, only the perfect berries arrive by gravity to the tank where they are left intact to begin a spontaneous fermentation following a cold soak. With not a single pump in use in the winery, delestage is conducted using a bespoke crane system to avoid any unneccesary agitation or oxidation of the juice. As with everyhing at Alma Carraovejas, there is no compromise and for this reason, no tank is ever used more than once in an effort to increase hygiene and limit contamination. Finally, depending on the vintage, the wine is aged for around 12 months in extra fine grained French and Amrican oak barrels of 225 litres. The final coupage being 94% Tinto Fino, 4% Cabernt Sauvignon and 2% Merlot.
