Manually harvested, vine by vine into small 14 Kg crates, the grapes arrive to the winery within minutes, where they are cooled for 24 hours. After two sorting tables and then a cutting-edge optical sorter, only perfect berries arrive by gravity to oak foudres, where they are left intact to begin a spontaneous fermentation following a cold soak. With not a single pump in use in the winery, delestage is conducted using a bespoke crane system to avoid any unneccesary agitation or oxidation of the juice. The wine is then fed by gravity to 225L new oak barrels of extra fine-grained wood for 24 months to mature, and then undergoes a minimum of 24 months bottle-ageing prior to release.
