The grapes are sourced from 5 vineyards representing 3 sub-appellations of the Willamette Valley, on a mix of volcanic/basalt, marine sediment and silty clay loam from 3 and 32 year old vines. Hand-harvesting begins in October before a cold soak as well as an inoculated post cold soak using multiple yeast types. Fermentation occurs in stainless steel before pressing using a mechanical basket press. The wine is then aged in 228L French oak barrels (mix of new and old) for 10 months. Before release, the wine is kept for a further 8 months.
