A magnificent Cabernet Sauvignon, this was selected from the stellar 2012 vintage, which was also when Susana's children, José and Ana, joined the business. It quietly matured in the family's cellars for more than a decade, to be released to mark the 25th anniversary of Susana Balbo wines. Cabernet Sauvignon was so superlative in the Uco Valley in 2012 that the very best lots were set aside with precisely this celebration in mind. With mature, meltingly-tender tannins, this deep red still benefits from exposure to air to reveal its many facets. Concentrated and aromatic, it displays ripe red fruit notes, cocoa, cedar and fine French oak. It has fabulous texture, and a long, beautifully-balanced finish.

Winemaking
Fruit was doubly-selected, at cluster level, and then by individual berry, before a 4-day pre-fermentation cold maceration. Fermented in barrels with native yeasts, punched-down twice daily, followed by extended maceration on skins for 35 days. Lees-aged with “batonnage” and malolactic conversion, followed by 18 months maturation in first-fill French oak.
