The grapes undergo a 10-day skin maceration and fermentation at 26-28°C to extract colour, flavour and fine tannins. After complete malolactic fermentation, the wine matures in temperature-controlled stainless steel tanks before further bottle ageing, preserving the purity, freshness and elegance of Nero di Troia.
