Grapes were harvested in the early morning and brought to the cellar before lunchtime. Thereafter the grapes were kept in a cool room for the night. The next morning the fruit was sorted, lightly crushed and transferred to stainless steel tanks for fermentation. Due to the cool nights during the grape ripening period there was no need for extended pre-fermentation maceration, so this was kept down to three days. The tanks were warmed up to encourage fermentation which took seven days with two pump overs a day. After fermentation the grapes were left on the skins for another seven days to soften the tannin. The wine was then removed from the skins and placed back into stainless steel where malolactic fermentation took place. There after the wine was aged in barrel for 12 months, moistly 3rd and 4th fill barrels being used.
