Winemaking
Grapes destemmed, cold soaked 2-5 days for colour and aromatics. After fermentation, 50% aged in American and French Oak barrels, 50% in stainless steel. Slow fermentation (78-80°F) for natural aromas. Malolactic fermentation and lees ageing for smooth, rich mouthfeel. 50% used French and American Oak Barrels, 50% Stainless Steel.
