MacMurray Central Coast Pinot Noir opens with delicate aromas and flavours of cherry, raspberry and pomegranite, accented by hints of vanilla and toast with a silky mouthfeel. With time to breath this wine will display an excellent balance of flavour, acidity and texture.
Winemaking
The grapes are destemmed but not crushed and cold soaked for 2 to 5 days to enhance the extraction of colour and aromatics. After fermentation 50% of the wine is aged in barrel using American and French Oak and 50% is aged in stainless steel. e natural aromas and flavour of this Pinot Noir, the lots were fermented slowly at temperatures ranging from 78°F to 80°F. This wine underwent malolactic fermentation and was aged on its lees to develop a smooth and rich mouthfeel - 50% in used French and American Oak Barrels; 50% in Stainless Steel.
