Winemaking
Hand-harvested in small crates, and vinified separately. Vermentino is gently whole-bunch pressed, Sauvignon Blanc undergoes cryomaceration in oxygen-free environment after destemming. Both ferment at controlled temperatures before ageing separately for nine months in casks, tonneaux, barriques and ceramic amphorae, then are blended and refined.
