Winemaking
With no added yeast, a long fermentation occurs using natural yeast, in temperature-regulated stainless steel tanks. Spontaneous malolactic fermentation happens to soften the acidity and give a creamier mouthfeel. It is matured on fine lees, with as little manipulation as possible for 12 months minimum. The wine is fined using bentonite and then one light filtration is performed before bottling.
